I’m a big fan of quick and easy throw it all together meals during the week, ‘cos let’s face it none of us have time to faff around when there’s a million and one other things that also need doing at the same time (kids lunchboxes, separating bickering kids, kid admin, ferrying kids to clubs….those pesky kids have got a lot to answer for!!). And it’s always good when you find something you can make that satisfies the more, let’s just say ‘particular’ appetites in the family, as well as those that like a bit more flavor.
This tomato sauce ticks all of those boxes and can be tarted up with a whole heap of different toppings to give a little variation. Plus it makes more than enough so you can stash it away in the freezer for the days when you realize you’ve got zero food in the house.
The time it takes to cook the spaghetti is pretty much the same time it will take you to make the sauce, so get the water boiling in a saucepan and get that spaghetti cooking!
I made two sauces at the same time – a kid friendly one and an adult friendly one – to do the same you need to heat a tbsp of olive oil in two small saucepans. Add 1 clove of crushed garlic to each pan and fry for 1 minute.
Chop the anchovies into small pieces and add to one of the saucepans. Cook for a further minute.
Pour half of the passata into one saucepan and half into the other and stir. Add 1 tbsp of balsamic vinegar to both sauces and heat gently for about 5 minutes.
Stir the capers into the sauce with the anchovies.
Drain the spaghetti and divide into two bowls. Pour plain sauce into one and anchovy sauce into another and stir until the spaghetti is coated.
Serve with a green salad and top with crumbled feta cheese.
TOP TIP – As I mentioned above, you can add a whole heap of different things to the sauce such as olives, lemon juice, chillies and as for toppings pretty much all cheese works and crumbled toasted pitta bread is also mega yummy.
