Ah, mashed potatoes! I don’t think there’s another side dish that’s quite as homey or comforting, and it’s a must for any traditional holiday table.
But for years, nutritionists have had potatoes on no-fly list because they were classified as simple carbs – a.k.a. sugar bombs. With advances in health science, now we know better, and potatoes are back on the table!
Looking for a healthy, simple side to serve with dinner? This delicious mashed potato recipe is dairy free, gluten-free, and topped off with plenty of fresh herbs!
1- Cut your potatoes into fourths and boil in the bone broth or stock for 10-15 minutes, until soft.
2- Transfer potatoes to bowl and add 1/2 cup of the cooking liquid from the pot.
3- Mash with the back of a fork or potato masher.
4- Add remaining ingredients and mix well; stir in more broth or stock as needed for desired consistency. Top with more fresh herbs as desired.
