Try These Gluten Free, Fat-Melting Sweet Potato Muffins For Breakfast

Now, here is how to prepare them:


1 small organic sweet potato, roasted (1 cup, packed)

3 organic free-range eggs, lightly beaten

½ cup of pure organic maple syrup

1 cup of organic brown rice flour

¼ cup of organic coconut flour

¾ cup of organic canned coconut milk

2 tablespoons of organic olive oil

1 tablespoon baking powder

1 teaspoon of ground ginger

⅛ teaspoon of ground cloves

1 tablespoon of ground cinnamon

⅛ teaspoon of ground nutmeg

½ teaspoon pink Himalayan salt


Oil a 12-hole muffin tray and preheat the oven to 400 ℉.

Poke holes in the sweet potato, and place it on the middle rack of the oven. Cook for an hour, and then remove it from heat.

Leave it to cool, and then scrape the flesh from the skin. Place the pulp in a mixing bowl, and add the coconut milk, maple syrup, and olive oil. Mix until you get a smooth mixture.

Mix the dry ingredients in another bowl, and then pour their mixture into the other mixing bowl.

Combine all ingredients well, and pour the resulting batter into the muffin tin. Make sure you leave ¼ to the top. Cook the muffins on the middle rack for half an hour.
